Instructor bio: Marné Minard is a nutritionist, NUNM alumna, and co-owner of Bastion, a health-focused restaurant and bakery in Portland, Oregon. She earned her Master’s in Nutrition from the National University of Natural Medicine and has built her work around a simple belief: deeply nourishing food should also be delicious, beautiful, satisfying, and accessible enough to become part of everyday life.
At Bastion, Marné works to make high-quality, seasonal, nutrient-dense food more mainstream by bringing the principles of holistic nutrition into a welcoming neighborhood restaurant setting. Bastion’s kitchen is entirely free from gluten, dairy, refined sugar, seed oils, soy, and corn, with a focus on thoughtfully sourced ingredients, organic and seasonal produce, and foods prepared from scratch.
Her larger mission is to help bridge the gap between nutrition and the way people actually eat—moving nourishing food beyond the realm of restriction or “health food” and into something joyful, abundant, and community-centered. Through Bastion, nutrition education, and her work with clients, Marné hopes to give people practical tools for nourishing themselves while demonstrating that food can support health without sacrificing pleasure, connection, or an excellent meal.
